Eating from the storecupboard: flatbreads

 

Since Luna hasn't been well with the respiratory infection I've been avoiding giving her a frozen yoghurt treat (dairy isn't good for mucus!) so I had a lot of yoghurt that was a bit touch and go.  Tasted ok so I used it to make flatbreads with 300g yoghurt, 350g plain flour plus a bit extra and 2 tsp of baking powder.  You could just use SR flour without the baking powder.

I just mixed it and kneaded it lightly for about 2 mins.  I divided it into 6 balls and patted it out into a naan bread shape. I don't have a rolling pin atm!

I put a teeny bit of oil into a hot wok and cooked it for a few minutes on each side.

After cooling on the rack I froze them.  I can use them as a pizza base or serve with a curry or chilli.

After making them I watched a YouTube video by Chetna (of Bake Off fame) make naans in a similar way but she used much less yoghurt and added water until she got the right consistency of dough.  Def much more frugal than equal quantities but I just needed to use up all my yoghurt asap.

  1. If it's any help, you can use an empty bottle as a rolling pin. Always a good excuse to 'declutter' a bottle of wine! Pollie

  2. I have made flat breads before and naan as well. So much better than those that are purchased. You will have lots of lovely tasting breads to use with curry, chili or as a pizza base.
